In 1997 it was difficult to find rustic, European style sourdough bread in Australia and so was born SOL Breads. Starting production in a converted garage, word soon spread, and sales grew such that larger premises were required. The business was renamed Wild Breads Pty Limited in 2007. In 2010 the business acquired Nomad Breads, a speciality Turkish bread and lavash manufacturer. The business expanded into a wide range of breads and café staples with Nomad and SOL being brands in the Wild Breads stable.
In 2016 a state-of-the-art facility was commissioned to bake artisan breads efficiently and cost effectively to supply wholesale to supermarkets around Australia. In March 2021, in recognition of the vast difference in the businesses, Wild Breads was separated into two focussed businesses – Wild Breads Fresh Pty Limited supplying fresh baked goods daily to cafes and small stores, and Wild Breads Pty Limited supplying a smaller range of frozen, high demand breads wholesale to supermarkets. In November 2021 Wild Breads Fresh Pty Limited was sold to allow a stronger focus on the wholesale business. In June 2022 this business (Wild Breads Pty Limited) was rebranded as Nomad Breads Pty Limited.
