• Nomad Breads Spinach Quesadilla Recipe

SPINACH QUESADILLA

Serves 4

This quick and easy Spinach Quesadilla recipe made with Nomad Breads Original Lavash makes the perfect alternative to a sandwich for your next lunch or late night supper.

Spinach Quesadilla

Ingredients

  • 4 pieces Nomad Breads Lavash
  • 1/4 white onion, finely chopped
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 7 cups baby spinach, roughly chopped
  • 1 egg
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh dill, chopped

Instructions

  1. Sauté the onion in olive oil and butter on medium heat until soft. Stir in the garlic and spinach and sauté for another 3-4 minutes. Season to taste and allow to cool.
  2. In a large bowl whisk together the egg, feta, parmesan and dill.
  3. Using your hands, squeeze any juices form the cooled spinach mixture and add this to the egg mixture and stir to combine.
  4. Lay a piece of lavash bread on a chopping board and spread 1/4 of the spinach and cheese filling along one of the short edges covering 1/3 of the bread then fold over twice to seal. Repeat with your remaining lavash bread.
  5. Using a sandwich press or non-stick fry pan toast your Quesadillas over low heat for around 4 minutes each side.

Notes

You can add some chopped chilli to the spinach mix when you add the garlic. Serve with yoghurt, tzatziki or sour cream.
