SPICY LAVASH SOUP

Makes 4

This spicy Mexican style soup featuring chicken, black beans, tomato and corn is served with crispy strips of Nomad Breads Lavash for added crunch.

Spicy Lavash Soup

Ingredients

  • LAVASH CRISPS
  • 2 pieces Nomad Breads Lavash cut into 2cm strips
  • 2 tablespoons olive oil
  • 1 teaspoon salt flakes
  • SOUP
  • 2 tablespoons olive oil
  • 1 brown onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 1 litre chicken stock
  • 2 x 400g cans diced tomatoes
  • 400g can black beans, drained and rinsed
  • 2 cups shredded cooked chicken
  • 1 1/2 cups fresh or frozen corn kernels
  • 1 tablespoon lime juice
  • 1 tablespoon chilli powder
  • 2 teaspoons cumin
  • 2 teaspoons salt, or to taste
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • coriander to garnish

Instructions

  1. Preheat oven to 180 degrees Celsius and line a baking tray with baking paper.
  2. In a bowl, mix the lavash strips, olive oil and salt. Spread the strips loosely over the baking tray and bake in the oven for 15 minutes or so until crisp and lightly golden brown. Set aside.
  3. In a large, heavy based saucepan heat the olive oil over medium-low. Add the onion and garlic and sauté gently for about 5 minutes until soft.
  4. Add the chicken broth, tomatoes, black beans, chicken, corn, lime juice, chilli powder, cumin, salt, pepper, smoked paprika, optional cayenne pepper, bring to the boil and simmer for around 5 – 10 minutes.
  5. Taste the soup and adjust the seasonings if necessary.
  6. To serve, ladle the soup into bowls and top with the crispy lavash strips

Notes

You can add sour cream, diced avocado and grated cheese as a garnish to the soup along with the crispy lavash strips.
