• Nomad Breads Potato and Leek Soup Recipe

POTATO AND LEEK SOUP

Serves 4

Potato and Leek Soup is always a favourite and this is a delicious recipe to make for dinner or supper served with toasted Nomad Breads Garlic Turkish.

POTATO AND LEEK SOUP

Ingredients

  • 1 packet Nomad Breads Garlic Turkish
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 leek, thinly sliced
  • 600g potatoes, peeled and chopped
  • 1 litre chicken or vegetable stock
  • crispy bacon pieces and chopped chives to garnish

Instructions

  1. In a heavy based saucepan heat the butter and oil over low heat until the butter has melted and is beginning to foam. Add the leek and cook for around 5 minutes until softened.
  2. Add the stock and potato and bring to the boil. Reduce the heat and simmer for around 20 minutes. Remove the soup from the heat and allow to cool before processing in a blender or food processor.
  3. To serve, reheat the soup in a saucepan on the stovetop. When ready, divide the soup among four bowls and top with the bacon pieces and chives.
  4. Enjoy with fingers of toasted Turkish Bread drizzled with olive oil.
